A single beef kidney, weighing approximately 1lb and sold by weight. Beef kidney is tender and flavorful when prepared well - not to mention they are packed full of nutrients! It is a fantastic source of protein and fat-soluble vitamins. Particular care should be taken when sourcing organ meats, and our beef offal meats are from family-raised pastured cattle for great, clean flavor!
Prepare kidney by removing any remaining membrane, cutting in half and cleaning away any connective tissue (and the fat if you don't want it), then cut into your desired shape. Soak for 2 hours in a mixture of cold water and vinegar or lemon juice, with a pinch of salt. Drain the kidneys, then you're ready to use a quick-cook method like marinading and pan-frying, or use a slow wet heat like adding to stews, chilis, steak and kidney pie, or slow cooker recipes! If you don't have time to soak, you can also prepare it by boiling at a full boil for 8 minutes or so.
