This is a 3-4 rib slab of delicious grassfed ground lamb from the Rocky Mountain pastures of Rafter W Ranch in Simla, CO! They are a bit smaller and range in size from .25lbs to .5lbs. Spare lamb ribs (also known as Denver cut ribs) are a somewhat uncommon cut, but you can find it seasonally on the menu at many high dollar restaurants - and for good reason! Lamb spare ribs can be prepared similarly to regular ribs, but are often done with a light Mediterranean twist or with a bold curry sauce.
Lamb from Audobon Certified Rafter W Ranch is Certified Grassfed from the American Grassfed Association. Lamb is pasture-raised and grass-fed, grass-finished for a wonderfully balanced trio of tenderness, juiciness, and gaminess.
