This package contains 2 lamb shanks, around 1.75lbs total, from the Rocky Mountain farm of Parker Pastures! Lamb shank is cut from the lower part of the leg, and are fairly lean so are typically cooked low and slow for excellent tenderness and flavor. Braise with a red wine gravy, or simmer with fresh herbs for a delightful dish.
Lamb from Parker Pastures is regeneratively raised by the Parker family's oldest daughter, Cloe. It is grassfed and finished on Certified Organic pastures, and the lambs are never given antibiotics, hormones, or GMOs. They are expertly processed by a nearby family-owned USDA-inspected processor.
