This is a ~.9-1lb spare rib slab (4-5 rib bones each), from grassfed lamb grown on the Rocky Mountain pastures of Parker Pastures in Gunnison, CO! Spare lamb ribs (also known as Denver cut ribs) are a somewhat uncommon cut, but you can find it seasonally on the menu at many high dollar restaurants - and for good reason! Lamb spare ribs can be prepared similarly to regular ribs, but are often done with a light Mediterranean twist or with a bold curry sauce.
Lamb from Parker Pastures is regeneratively raised by the Parker family's oldest daughter, Cloe. It is grassfed and finished on Certified Organic pastures, and the lambs are never given antibiotics, hormones, or GMOs. They are expertly processed by a nearby family-owned USDA-inspected processor.
