The pork jowl, or cheek, is extremely similar in makeup to the fatty, tender, and delicious pork belly. It can be sliced and cooked like bacon, or braised and roasted whole. Jowls are used to make guanciale, the traditional Italian version of bacon. A truly fabulous and often overlooked cut.
