Rocky Mountain Oysters, also called lamb fries, stones, or prairie oysters, come with 2 testicles per package and weigh ~6oz total. They are eaten and prized in many parts of the world for a very pleasant texture almost identical to that of scallops (hence the "oyster")! They can be prepared in a number of ways, with the most popular being grilling. A grilled lamb testicle holds picks up the delicious smoky flavor of the grill, and the outer membrane turns crispy and charred while holding moisture inside throughout cooking.
