Our Guinea hens run 2.5-3.5 lbs. Guinea is higher in protein than either chicken or turkey, and has a slightly gamier flavor that rests somewhere between chicken and pheasant. The Guinea hen, while lesser known in the US, is an incredibly popular dish in Europe. Roast your guinea for a delicious main dish, or braise it low and slow or in a stew to coax out even more incredible flavors.
Guineas truly roam the pastures and White Oak Pastures, farther than any other poultry species. They roam completely unconfined in the pastures eating bugs and grubs in the soil, and are also offered a non-GMO supplement, which contains grains like corn, soy, barley and wheat. They never receive antibiotics, artificial growth hormones or steroids, and are processed on our farm in a zero-waste processing abattoir. Our guinea hens are Certified Non-GMO and EOV (Ecological Outcome Verified) in the Land2Market Program.
